The St. Moritz Gourmet Festival returns this winter, showcasing international gastronomy in a symphony of irresistible flavours. At Kulm Hotel we will welcome to Sunny Bar & Grill guest Chef Stefano Baiocco, offering an exclusive menu.

He refers to his cooking as ‘simple natural cuisine’, and his signature dish is an Insalata. When Stefano Baiocco prepares it, ‘simple’ means the salad consists of one item from each of the 120 to 150 various herbal plants grown in the restaurant garden, arranged using surgical tweezers and ordered the day before so that the leaves and flowers can be picked fresh in the morning. Stefano Baiocco focuses on perfection in every detail at his two-star restaurant in the fairytale, historic Villa Feltrinelli on the shores of Lake Garda.

16 chefs work here for 36 guests, led by a culinary virtuoso whose creations have found fans in celebrities such as Naomi Campbell as well as gourmets and gastronomic critics. Stefano Baiocco’s homemade pasta dishes are among the best in Italy. The 51-year-old learned his trade from the best in the business: Alain Ducasse and Pierre Gagnaire in Paris and in Spain at Ferran Adrià’s legendary elBulli. He has also worked in Michelin-starred restaurants in New York, Hong Kong and Oxford before fulfilling his dream of haute cuisine at Feltrinelli on the shores of Lake Garda. Here he composes dishes from 52 different types of tomato or combines roasted cucumbers with oysters and kiwi juice.

Anyone wanting an idea of how to prepare this can find inspiration in his cookbook ‘Mise en Place’, which won the World Cookbook Award in 2008.
